Portion: ½ waffle = 1 starch

1 ½ c flour
1 ½ c whole wheat flour
1 c rolled oats
1 ½ tbsp baking powder
¾ tsp salt
1 ½ pinches nutmeg

2 ½ c 2% low-fat milk
2 tbsp butter, melted and cooled
3 eggs
1 ½ tbsp brown sugar

Set waffle maker on ‘3’ and preheat until ready as indicated by green light. In medium mixing bowl, whisk all dry ingredients (except brown sugar). In measuring cup, measure milk and whisk in all other wet ingredients, plus brown sugar. Add all wet ingredients to the dry and mix well until all is incorporated. Let sit for 4 minutes. Pour ½ cup at a time for each waffle and cook until light turns green or waffles are golden brown. To freeze, cool completely on wire racks and put in Ziploc bags.
